Creamy Cauliflower Soup

It’s blustery, cold and the days are short. There’s nothing better than a hearty bowl of soup to warm you up on a winter’s day. Soup is a simple way to add some extra vegetables into your diet. This soup has a cheeky added extra to keep you feeling fuller for longer. Enjoy x

You will need:

  • One head of cauliflower
  • One potato – leave the skin on
  • One onion
  • Two cloves of garlic
  • One can of cannellini beans
  • Chicken or vegetable stock or broth
  • Teaspoon coriander powder
  • Salt and pepper to taste
  • Olive oil for cooking


  1. roughly chop all vegetables
  2. heat large pot and add olive oil
  3. fry onion until it begins to turn brown, then add garlic
  4. place cauliflower and potato in the pot
  5. pour enough stock over vegetable so that it only just covers them
  6. stir through some coriander powder and leave to simmer on low for about an hour or until vegetables are soft
  7. add washed cannellini beans and allow to heat through
  8. blend with stick blender until smooth
  9. add salt and pepper to season to your liking

Makes 3 – 4 serves and freezes well.
