Green Pancakes

This recipe is my family’s favourite weekend breakfast. High protein, no added sugar and full of hidden nutrients – these pancakes are perfect for breakfast, lunch or just a little snack!

You will need:

  • 1 medium sized banana
  • 1 egg
  • A large handful spinach leaves, washed
  • 1/2 cup oats
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • Oil for cooking

Method:

  1. Pre heat fry pan on medium heat
  2. Add all ingredients to a blender or food processor
  3. Blend until you create a smooth batter
  4. Lightly grease fry pan with cooking oil
  5. Pour batter into fry pan
  6. flip once bubble begin to appear
  7. Turn out onto plate and top with your favourite toppings!

Makes one serve
