This recipe is my family’s favourite weekend breakfast. High protein, no added sugar and full of hidden nutrients – these pancakes are perfect for breakfast, lunch or just a little snack! The flour in this recipe can be replaced with and gluten free option or completely omitted. I just find adding it makes the mixture a bit easier to work with.

You will need:

  • 1 medium sized banana
  • 2 eggs
  • A handful of fresh, washed spinach leaves
  • 4 tablespoons of wholemeal self raising flour
  • 1 teaspoon vanilla essence
  • Oil for cooking

Method:

  1. Pre heat your favourite fry pan
  2. Add banana, spinach, eggs and vanilla to a bowl, jug or blender
  3. Blend ingredients together until you create a smooth batter
  4. Gentle stir in flour
  5. Lightly grease fry pan with cooking oil
  6. Pour batter into fry pan
  7. Wait until a “skin” begins to appear on pancake before you flip
  8. Turn out onto plate and top with your favourite toppings!

Makes one serve
