This recipe is my family’s favourite weekend breakfast. High protein, no added sugar and full of hidden nutrients – these pancakes are perfect for breakfast, lunch or just a little snack!
You will need:
- 1 medium sized banana
- 1 egg
- A large handful spinach leaves, washed
- 1/2 cup oats
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla essence
- Oil for cooking
Method:
- Pre heat fry pan on medium heat
- Add all ingredients to a blender or food processor
- Blend until you create a smooth batter
- Lightly grease fry pan with cooking oil
- Pour batter into fry pan
- flip once bubble begin to appear
- Turn out onto plate and top with your favourite toppings!
