This is a recipe my 3-year-old came up with the other day. She was reading a story with her dad where the main character was baking cupcakes. These cupcakes had marshmallows in them and other sorts of sugary goodies. She then asked what would mummy do if she made these? Her dad said she’d probably put fruit in them (what a good man). So, she decided that the cupcakes would be best made with fruit and then you should put some yogurt on top. So that’s what we did! They are absolutely, delicious for adults and children alike.
You will need
- 1 cup full fat Greek yogurt
- 1 tablespoon chia seeds
- 1 teaspoon honey
- 1 peach, diced (or alternative fruit)
- Mix together yogurt, chia seeds and honey
- Cut fruit and distribute among 12 mini muffin/cupcake trays
- Cover with cling wrap and place in the freezer until they are firm
- Turn out and enjoy or store in container in the freezer for 1 month
