This is the ultimate comfort food, perfect for a winters evening. No guilt associated with this one though! Full of flavour with tons of spices and a good whack of healthy fats to keep you satisfied. As much as the recipe calls for salmon, it can be substituted for chicken or tofu if fish is not to your liking. 

You will need:

  • 1/2 onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 2 teaspoons dried chives
  • 1 tomato, roughly chopped
  • 3/4 cup chicken or vegetable stock
  • 2 fillets salmon skin on
  • 1 cup baby spinach leaves, washed
  • 3 tablespoons Greek yoghurt
  • Olive oil for cooking
  1. Fry onion in 2 tablespoons of olive oil until golden brown. Add in tomato and cook until it begins to soften
  2. Add spices and stock. Simmer until stock is reduced by half
  3. Transfer into bowl and set aside
  4. Add salmon skin side down into pan on low heat. Pan fry until skin is crisp then turn and cook for a further 2-3mins
  5. Pour in stock and onion mix, add spinach leaves
  6. Remove salmon, then stir in yoghurt
  7. Serve with steamed vegetables such as beans, cauliflower, and broccoli
