Chocolate and pear, the perfect combination. When you sweeten with fruit rather than large amounts of refined sugar, you know you’ve got a winner you can comfortably go back for seconds for! These have been a hit at my place in the afternoon, full or fibre and chocolately goodness and an absolute cinch to make!
You will need:
- 50g salted butter
- ¼ cup brown sugar
- 2 tablespoon unsweetened cocoa powder
- 2 tablespoon almond butter
- 2 eggs
- 1 banana
- 1 pear
- ½ cup milk
- ¾ cup wholemeal flour
- ½ teaspoon baking powder
Method:
- Preheat oven to 180˚C
- Place butter in a heat proof dish, then into the microwave on high for 30 seconds to soften and melt
- Remove butter from microwave, add brown sugar, cocoa powder and almond butter
- Stir to thoroughly combine, removing any lumps then set aside
- Add eggs to a large mixing bowl, whisk until light and fluffy
- Mash banana and add to eggs, combine
- Grate pear, add to banana and eggs, combine
- Add milk to egg mixture and combine
- Sift in flour and baking powder and gently combine then pour in chocolate mixture, combine until entirely incorporated
- Spoon batter into a lined muffin tray and bake for 20 minutes
- Remove from oven and cool on a cooling rack then store in an airtight container in the fridge
