Creamy Tomato Pasta

Serves 4

A super simple pasta dish, perfect for a mid-week dinner. Creamy, dairy free and high in protein and fibre. This one’s a winner for any member of the family!

You will need:

1/2 onion, diced
2 cloves garlic, minced
5 medium sized mushrooms, sliced
4 short cut bacon, cut into small pieces
400g Passata sauce
1/3 cup basil leaves, torn
1 teaspoon soy sauce
1 teaspoon brown sugar
1/2 cup coconut milk (from can)
250g lentil spirals

~ Brown onion and garlic in a large fry pan
~ Add mushrooms and soften
~ Brown bacon then pour in Passata sauce
~ Add torn basil, a large sprinkling of cinnamon and paprika along with soy sauce and brown sugar
~ Simmer for 5 minutes
~ Meanwhile, prepare pasta according to manufacture’s instructions
~ Add coconut milk to sauce
~ Strain pasta and add to sauce, stir through and serve!
